Yummy Breakfast

Maggie and I were out before eight to wrap up the final hairstyle for the big day. The finished style was chosen and so was the hairdresser. She is back in bed for a little more shut eye.

Check out this quilt that was in the dressing room of the lead singer in 'Wicked'. It was on Caesar Millan's show
The Dog Whisperer, hence the photo of the tv. I didn't catch what town it was in but I did notice the very simple quilting (mostly meandering). The singer had a barking yorkie that was acting up when she had her green makeup put on her. Needless to say, the dog is cured of any bad qualities. How does he do it?

This Mexican breakfast, chilaquiles, was given to me by my Weight Watcher girlfriend and I decided to make it for the kids. It is a major big hit and I am going to share it with you.

Black Bean and Chicken Chilaquiles

cooking spray
1 c. thinly sliced onion
5 garlic cloves, minced
2 c. shredded cooked chicken breast
1 - 15 oz. can black beans, rinsed and drained
1 c. fat free, low sodium chicken broth
1 c. fresh salsa
15 (6 in) corn tortillas, cut into 1" strips
1 c. shredded queso blanco cheese (about 4 oz)

Preheat oven to 450.
Heat a large nonstick skillet over medium heat and coat with cooking spray. Add onion; saute' 5 minutes. Add garlic; saute' 1 minute. Add chicken; cook 30 seconds. Transfer mixture to a medium bowl; stir in beans. Add broth and salsa to pan; bring to a boil. Reduce heat, and simmer 5 minutes, stirring occasionally. Set aside.

Place half of tortilla strips in bottom of an 11 x 7" baking dish that is coated with cooking spray. Layer half of chicken mixture over tortillas; top with remaining tortillas and chicken mixture. Pour broth mix evenly over chicken mixture. Sprinkle with cheese and bake for 10 minutes or until tortillas are lightly browned and cheese is melted.

Refrigerate leftovers in containers with tight fitting lids. To reheat, drizzle with a tablespoon of water and nuke until just thoroughly heated.

Just have to show you this, an IKEA ongoing Ad. I think it one of the best I've seen in a long while. It is a guy in an empty flat/apt and the url says "waiting until Sept." which is the time the new catalogue comes out. Then, as I am told, he will fill up his flat with IKEA furniture. He is always reading the catalogue. You will notice his colours and his name is 'Nils'! Enjoy, you can visit anytime of day or night. I tried to call him, number is on the site but I think he turned off the phone....too many calls perhaps!!! LOL...
