The Other White Meat

Remember back a couple weeks when my old (and I do mean old) college roommate Maggie madethis stuffed pork tenderloin? This a picture of it before it was cooked and this
is a picture of it after it was cooked. It was so good and such a big hit that last week Genie made

it for dinner. She cut the tenderloin opened like a book and put in pesto, feta cheese, baby spinach and roasted red peppers. She made it almost exactly like Maggie's except for using feta instead of cheddar. Doesn't it look wonderful? It's a nice presentation too. Make it for your old man.
