Kids Cooking

The kids were here this past weekend and what with the bad weather, they had to change their mindset to occupy themselves
with something other than being outside.  I just so happened to get a few new, 'just in' cookbooks from the local library.  Along with the James Beard Cookbook and
Pati's Mexican Table, I got the Grand
Cocina Latina.  After going through it extensively, Maggie and Evan decided to make

the chilean version of beef empanadas.  Normally, the empanadas I have had are folded over and crimped but the chilean's do it a different way.

They roll out the dough and then put in the filling, which consists of ground beef, spices, onions, garlic, hard boiled eggs, raisins and olives.  The dough is then folded over but instead of crimping, they fold the remaining dough over itself.  These were baked, not fried, which is a healthier version.  Maggie and Evan have spent some time in Chile and I am pretty sure that helped with the decision on what to make.
