Miss Matilda

One of my favorite sandwiches in the world came from copying a steamed bagel called Miss Matilda from the Chicago Bagel Authority. I make it once or twice a year.
The ingredients include an onion bagel, turkey, swiss cheese, smoked cheddar cheese, thin sliced cukes, sliced tomatoes and mayo.  Make the sandwiches up and

wrap them up with parchment paper, secured with toothpicks.  Don't use colored toothpicks like I did, because some of the color came off in the sandwich.

Place it in a steamer (or a colander with some sort of a lid.)

Place over boiling water for fifteen minutes or so.

Unwrap and enjoy.  They are soft and wonderful.  Try it; you'll like it!

Yep!! I can attest to how delicious these are..but you can only eat half...especially if your chocolate chip cookies are close by!
